Heavy texture - it’s a metaphor, and like all wine metaphors can mean lots of different things to every single person. But metaphors can be explained, experienced, and shared in a common understanding. You all know the difference between skim milk and creamy and would never confuse the two even if they have a similar flavor profile. 

And these metaphors can be expressed in scientific terms - polyphenols and phenolic character; flavanols and their qualities; fermentation processes, malolactic conversion or lack thereof; fining and filtering, and pretty much every other tool at a winemaker’s hands.
